Chicken Burgers

Winner winner chicken dinner! These are low carb, high protein and so fresh, delicious and easy! You could use some big grilled mushrooms as your “bun” instead if you like too. That would be awesome! You could also sub the chicken burgers for beef, or roo, or fish. Anyway, go get this in your guts. You are going to love it!

1kg chicken breasts
2 handfuls spinach
1 red chilli, deseeded
4 cloves garlic
3cm chunk ginger
1 cup grated zucchini or zucchini squash
2 eggs
Lettuce leaves
Sliced tomatoes
Anything else you want on your burger

Preheat oven to 180C. In your food processor chop up chilli, ginger, garlic & spinach. Add chicken breasts & blend until minced. Mix through grated zucchini & eggs. Line a baking tray with baking paper. Form burger sized patties and place on the tray. You could roll them in almond meal or coconut flour too if you wanted too. Bake for about 15mins or until cooked. You can chuck these in the frypan instead to cook if you prefer. Grab your lettuce cups, this is your faux-bun, add whatever other burger bits & pieces you like. We did slices of roast sweet potato & capsicum, tomato, avocado & some of my Raspberry Chilli Relish.

Woot woo, don’t I feel very special today! I received a notification saying that at350degrees nominated me for an Inspiring Blog Award! This calls for a celebration…. Perhaps I’ll make a cake…. Like I need an excuse to make a sweet treat! Anyway, thank you at350degrees it is a lovely gesture and I very much appreciate it and all the other fabulous foodies that follow my blog. Whether it’s a visit every day, or just once in a while, I appreciate it. This is starting to sound like a bad Grammy’s speech so I will stop now before I start thanking every person who I have ever met ;)

Paleo Pastry

I had an urge to make a pie for dinner tonight so had a bit of a search for different ways I could do this without white flour and butter…. I found a few recipes and this is what I came up with. Mine was a bit crumbly this time but I think I overworked the pastry. You could definitely leave out the savoury spices, add some cinnamon and use it as a sweet pastry dough.

200g Almond Meal (I used 100g flaxseed and 100g almond meal)
2 Eggs
1/2 Tablespoon Coconut Oil
Pinch of salt, onion powder, garlic powder & any other herbs you like.

Mix all the ingredients together in a bowl until the form a nice ‘dough’. Try not to overmix. Roll out on a lightly floured board into a circle 1/8 inch thick and one inch larger than the diameter of the top of the pie pan. (I roll between two pieces of non-stick baking paper to help handling and cleaning up then I strip off one side of the waxed paper transport it to the pie pan and press it in). trim to the edge of the pie pan. Prick with a fork. Bake at 220C for 12 – 15 minutes or until a golden brown.

I did try and get on board with pinterest but I just don’t get it? I know I am being dim and that it is quite simple but it just doesn’t do it for me yet. I will keep trying…. The times they are a changin’

After looking at so many people’s fabulous blogs, I decided that MyFoodReligion needed a bit of a spruce up, or a “joozh” as Carlson from Queer Eye for the Straight Guy would say. So, here it is.

Hopefully it is a bit more user friendly now that you can “search” for specific ingredients on the search bar or use the “categories” tab to find meal type you are after. I have also added a few links on the side of websites you might like to visit.

I am also the proud new owner of a THERMOMIX which should hopefully arrive next week when I get back from holidays!! This thing is like the King of all appliances. It is every kitchen appliance I have taking up cupboard space (blender, food processor, stick mixer, slow cooker, rice cooker, steamer), as well as all the ones I want (ice cream maker, yoghurt maker, juicer), rolled into one. I met my first Thermomix on Saturday and it was love at 1st sight and I knew right away that we were meant to be together. I will be paying it off for the rest of my life but I am hoping that I will be saving some serious $$ when I can make my own almond meal, nut butter, coconut milk yoghurt and ice cream in a jiffy instead of paying a fortune for them in the store.
