Toasted Coconut & Goji Chocolate & a Rant about Calories

This is totally faux chocolate, don’t hate me for tricking you. It tastes like angels dancing on your tongue so just go and make it.

Calories schmalories…. Ok, Strap yourself in, this is going to get messy. WARNING! Rant about to begin! Lately there has been a stupid number of people talk to me about calories. How many calories are in that dish, how many calories can I eat for lunch, can I have 5 almonds or 6? IT DOES NOT MATTER!!! Calorie counting = diets and I do not believe in diets! Just like I don’t believe in vampires (sorry Twi-hards but I don’t) diets are equally as ridiculous! They do NOT work. Maybe for a month, or an 8-week challenge or even a year, but long term they all fail because as soon as you stop dieting, you put that weight back on, plus some. You cannot spend your life on an 8-week challenge.

You need to adopt clean, nutritious eating habits permanently. For life. Forever. That is not to say you cannot go out to dinner, you can’t have the occasional dessert, it means that you educate yourself about what is actually in the food you are eating, so, more importantly than “how many calories does it have?” you are asking “what can this food do for me?”, “what health benefits will I get from eating this deep fried Mars bar?”- the answer to that last question my friends is NONE, you will get a sugar high, then a sugar low. The amount of fat & sugar together is taking the whole lot straight to your ar$e, you might clog a few arteries along the way and possibly end up constipated from the amount of cr@p now clogging your guts. Still want it?

If you are eating clean, nutritious, whole foods that are not packed full of preservatives and artificial everything, you will not overeat. You will be full because good food fills you up, unlike sugar which enables you to smash that entire packet of lollies and be hungry again 15mins later.

Fats are NOT the devil provided they are good fats (nuts, seeds, coconut oil, olive oil), your body needs fat! Your weight loss and ultimately health will suffer if you are NOT giving your body enough fat. Good dietary fat is used to build the outer lipid layer of every cell in the body, and if that layer is impaired, your ability to process carbohydrates will be impaired, and you’ll get fatter. Stay away from all TRANS fats- that $hit will kill you.

Take a step away from the calorie panel and before you shove anything suspect down your pie hole, ask yourself “what can this food do for me?”, google it, ask us, download an app, I don’t care. If you cannot find an honestly positive health benefit from it, don’t eat it! ‘High in fibre’ or ‘low in fat’ is NOT good enough, that does not make it healthy. Rant over. Now go make this delicious treat.

500g dried coconut, lightly toasted
1/2 cup goji berries (cranberries or another dried fruit would be fine too)
1/4 cup raw cacao nibs (or dark choc chips)
1/2 cup mixed seeds/nuts (whatever you like)
1/2 tsp vanilla powder or extract

Pop the toasted coconut into your food processor & blend until it turns into a smooth liquidy consistency. It only took a couple of minutes but it might take about 10 depending on how strong your food processor is. Keep scraping down the sides & be patient, it’s worth it! Once you have the buttery liquid, add all the remaining ingredients and stir though gently to combine. Spoon into moulds or just pour into a baking paper lined tray. Pop it in the fridge to set.

Coconutty Fudge

I had a heap of coconut butter left over from making my Coconutty Cookies and I thought that, instead of just eating it with a spoon out of the thermomix (not that I would do that…..Totally hypothetically speaking…. Ok, alright, I have, and probably will again, stop judging you judgey mcjudge), I would make some fudge because that is my fallback plan for leftover nut butter and this was similar and I am not feeling very imaginative.

These quantities are pretty rough so just use them as a guide and adjust as you need to.

1 cup of coconut butter (ish? Maybe closer to 1&1/2 cups?)
2 heaped tbs whey protein
1/2 tsp vanilla powder
2 tsp lucuma powder (you can leave this out, I just chucked it in because I had it)
Pinch stevia (or pure maple syrup)
Raw cacao nibs to decorate- optional

Mix everything really well in a bowl. Pour into a baking paper lined dish. Pop it in the fridge to set. Voila.

Coconutty Cookies

I don’t know why there is a kettle bell in this photo? Maybe these cookies make you want to do some kettlebell swings. I think Trav was being a creative genius. I don’t question it, he’s the photo dude. I was making some more Choc Coconut Clusters and I went a bit overboard with the mixture….. So I started adding extra things to the bowl and these happened. They are, well, coconutty. They are not chocolatey though you could add more cacao if you wanted a more chocolate taste. Hot tip. Coconut butter & coconut oil ARE NOT the same thing people. Think peanut butter v’s peanut oil. Coconut oil is the oil extracted from coconut flesh. Coconut butter is the whole coconut flesh puréed into a butter.

Don’t be deterred by the high fat content of coconuts, the saturated fat in coconut is made up of short-chain and medium-chain fatty acids the body quickly turns into energy instead of storing as fat. Therefore, even though it’s high in saturated fat, coconut can aid in weight loss. Half the medium-chain fatty acids in coconut are composed of lauric acid, which is anti-viral, anti-bacterial, anti-microbial and anti-fungal. Coconut can help boost the immune system.

3 cups coconut flakes (shredded will be fine)- preservative free
1 heaped tsp cinnamon
1/2 tsp vanilla powder or extract
Optional- 2 tbs protein powder
3 eggs
2 tbs raw cacao
1 tbs nut butter
1 cup Coconut Butter (if you don’t have this you can use 1/2 cup coconut oil & 1/2 nut butter)
Dash stevia (or maple syrup if you prefer)

Preheat oven to 150C. line some baking trays with baking paper. Ok, in a bowl whisk together the cinnamon, vanilla, stevia, cacao and eggs. Pour over the coconut and mix well. Heat your nut butter and coconut butter gently in the microwave or a small pot until it is a bit runny. Pour this over the coconut mix and give it a good mix. It should be looking doughy. If it is too dry, add another egg. Add protein powder now if you are using it. Once all is combined and doughy. With your hands roll into cookie shapes, place in tray, bake for 5-10 mins depending on how fudgy or crunchy you like them. I did mine for about 8 mins. I drizzled some extra coconut butter on top. These are best stored in the fridge though they do freeze well.

Choc Coconut Clusters

These are just yum. Sugar free. Fab snack. Taste naughty but they are totally good. Easy peasey to make. Sprinkle on stuff…. or just sprinkle right into your pie-hole. Less talk, more baking. Go.

2 egg whites
1 tsp cinnamon
1tbs raw cacao
1/2 tsp vanilla powder
OPTIONAL- 2 tbs maple syrup or stevia to taste- I didn’t add this but if you like stuff sweeter you might want to.
500g coconut chips

Preheat oven to 160C. Line a baking tray with baking paper. In a bowl whisk the egg whites, cinnamon, cacao & vanilla (plus sweetener if using), pour this over the coconut chips & mix well to coat the coconut then pour onto the baking tray and spread out gently. Bake for about 10-15 mins or until crisped up. Allow to cool then munch away.

Cookies & Cream Ice Cream

This is super quick & easy. I tired to make coconut, vanilla, pistachio cookies this week…. They were a massive freestyle-cookie-making fail! They tasted delicious but ended up as a tray of crumbs hence their utilization here :) If you do not have an ice cream maker you can just use your food processor but the consistency might not be as smooth.

Natural yoghurt packs a punch of protein, calcium & healthy tummy probiotics and you all know how much I cannot get enough of coconut in all it’s forms. Don’t be deterred by the high fat content of coconuts, the saturated fat in coconut is made up of short-chain and medium-chain fatty acids the body quickly turns into energy instead of storing as fat. Therefore, even though it’s high in saturated fat, coconut can aid in weight loss. Half the medium-chain fatty acids in coconut are composed of lauric acid, which is anti-viral, anti-bacterial, anti-microbial and anti-fungal. Coconut can help boost the immune system.

500ml full fat coconut cream
250ml natural yoghurt (coconut milk yoghurt or dairy)
1/2 tsp vanilla powder
1 cup cookie crumbs (optional) you could use berries or raw cacao nibs instead

Blend everything except the cookie crumbs in the food processor until smooth. TASTE IT! If you want it sweeter add some maple syrup or your choice of sweetener & reblend. Pour into the ice cream maker and let the magic happen. You can add the cookie crumbs about 5 mins before you are ready to turn the ice cream maker off. Don’t forget to save some crumbs to sprinkle on top :) Non-ice cream maker owners: Blend the mix in the food processor (without the crumbs), pour into a tupperware container and pop it in the freezer for a few hours until set. Once frozen, Chop it into chunks, pop it back in the food processor & blend until smooth again. Stir through crumbs & serve. It will have more of a “soft serve” consistency.
