Minted Ginger Lemonade

Holy sweatballs it is hot! We needed a cool refreshment, ice cold lemonade would be nice, sans the kilos of sugar please & thank you! Lemons are antibacterial, antiviral, immune boosting, aids ingestion and helps cleanse the liver. Ginger is loaded with antioxidants, is anti-inflammatory and is an excellent for alleviating gastrointestinal distress.

1/2-1 cup fresh lemon juice (depends how lemony you like it)
Dash stevia
1/2 cup finely chopped mint
4 kaffir lime leaves, finely chopped
Zest of 2-3 lemons
1.25l sparking mineral water/soda water
2 tbs freshly grated ginger

In a large jug muddle together all ingredients except mineral water OR if you have a stick blender use that to blitz everything together. Pour over mineral water and mix well. That’s it. You’re done. I strained off the green bits for the photo because it looked a bit like I had lawn clippings in my jar but I actually drank it with all the special green stuff :) This would be delicious as a cocktail…..

Orange, Ginger & Oat Cookies

These are so easy and a fabulous dose of healthy, low GI carbs & are very low fat. Oats are very high in a fibre called beta glucans that can help lower cholesterol, we’ve all seen the ad’s, you know why you should eat them. They are not completely gluten free but are VERY low in gluten and are a great source of energy. Ginger has health benefits ranging from reducing morning and motion sickness, cancer prevention, cold & flu prevention, reducing pain & inflammation & migrane relief.

3 cups whole grain oats
2 tbs orange zest
2 tbs fresh grated ginger
1 tbs cinnamon
1 cup fresh orange juice
1/2 cup water
Stevia to taste or about 2 tbs honey (taste it and see what you think, add more if you like it sweeter)
1 egg

Preheat oven to 180C. Line a baking tray with baking paper. Place all ingredients into food processor and blend until it forms a dough. Wet hands and roll dough into cookie shapes and pop on tray. Bake for about 15mins or until cooked to your liking.

Ginger Spiced Freezer Fudge

This recipe was inspired by one I saw on Paleo in Portland’s blog and it looked too delicious not to give a go. Now, sweet tooths (toothed?? Is tooths the plural? Teeth? Sweet teeth?!?!) just cool your jets (that’s you Travis-3-cakes-Cooper), this is a TREAT not an “always” food. It is pretty high in fat, and even though they are all very GOOD fats, you probably don’t want to eat the entire lot in one go. I used my homemade CAC (Cashew, Almond and Coconut) butter but you can use any nutbutter you fancy.

1/2 cup cocount oil
1 cup Nut butter
Stevia to taste (you can use a tbs or 2 of honey if you like)
1/2 tsp organic vanilla powder or real vanilla
1/2 tsp cloves
1/2 tsp nutmeg
1 tsp cinnamon
1-2 tsp ground ginger (I used 2 but I LOOOVVEE ginger)

Melt everything together in a saucepan over low heat. Pour into a prepared 8X8 pan and toss in the freezer to harden. It takes a few hours to harden. Remove from freezer and cut into squares. I keep mine in a ziplock in the freezer, but the fridge is fine too.
