Orange & Almond Cookies

I wanted to bake a cake tonight. Lemon & poppyseed. I didn’t have any lemons left. Or poppyseeds. Then I lost interest in the cake idea, they do take a while to bake. I have no patience today. So, change of plan. Cookies. Actually cookie dough, or bake-free cookies if you like. You will like. They are fast, they are clean, they are sugar free, they are full of great healthy fats & protein. Splendid splendid no bake orange & almond cookies, or balls, you can make them balls, or just eat the dough out of the bowl. I totally didn’t do that.

1/2 cup almond meal
1 cup coconut butter ( if you don’t have this use 1/2 cup coconut flour & 1/2 cup coconut oil)
Juice & zest of 1 orange
Stevia to taste (or sweetener of your choice)
1/2 tsp vanilla powder or extract
1/4 cup chopped lightly toasted almond (optional)
1/2 cup flavorless (or vanilla) protein powder (you can use extra coconut flour if you don’t have this)
Pinch salt

Add everything together in a bowl or food processor & mix well until completely combined. Should be a dough-like consistency. You can add a bit extra coconut/almond flour if it is too wet still. Spoon into your hand and shape into whatever you like and pop them in the freezer to set. I store mine in the freezer too but the fridge would be fine. I also baked a couple just for fun. 180C for about 10-15 mins.

Orange & Almond Cake

Bake your own treats!!
Store bought cakes are pretty much full of sugar, butter & white flour.
If you’re entertaining or going out, bake a cake yourself. This way you can:
Swap sugar à Raw honey
Swap butter à coconut oil or nut butters/spreads like almond or sunflower seed butter
Swap white Flour à almond meal or coconut flour.

Simple but delicious

Orange & Almond Cake
2 oranges
3 eggs
3 cups almond meal
1/2 cup raw honey
1 teaspoon GF baking powder

Preheat oven to 170°C. Brush a round 22cm (base measurement) pan with melted coconut oil. Line base with non-stick baking paper
Place the oranges in a saucepan and cover with cold water. Bring to the boil over medium heat. Cook for 15 minutes or until tender. Drain. Return to pan and cover with cold water. Bring to the boil and cook for 15 minutes (this will reduce the bitterness of the peel). Refresh under cold water. Drain. Coarsely chop oranges. Remove and discard any seeds
Place the orange in the bowl of a food processor and process until smooth
Use an electric beater to whisk the eggs and honey in a bowl until thick and pale. Add the orange, almond meal and baking powder and gently fold until just combined. Pour into prepared pan
Bake for 1 hour or until a skewer inserted into the centre comes out clean. Set aside for 15 minutes to cool.
Squeeze the juice of 1/2 orange over the top & gently drizzle some honey over the top

Orange, Ginger & Oat Cookies

These are so easy and a fabulous dose of healthy, low GI carbs & are very low fat. Oats are very high in a fibre called beta glucans that can help lower cholesterol, we’ve all seen the ad’s, you know why you should eat them. They are not completely gluten free but are VERY low in gluten and are a great source of energy. Ginger has health benefits ranging from reducing morning and motion sickness, cancer prevention, cold & flu prevention, reducing pain & inflammation & migrane relief.

3 cups whole grain oats
2 tbs orange zest
2 tbs fresh grated ginger
1 tbs cinnamon
1 cup fresh orange juice
1/2 cup water
Stevia to taste or about 2 tbs honey (taste it and see what you think, add more if you like it sweeter)
1 egg

Preheat oven to 180C. Line a baking tray with baking paper. Place all ingredients into food processor and blend until it forms a dough. Wet hands and roll dough into cookie shapes and pop on tray. Bake for about 15mins or until cooked to your liking.
