Berry Piklets

I am feeling in the “giving” mood today, must be Xmas just around the corner…. I have already posted today but thought you might like a food post too. You’re welcome.

Chia has long be touted as a superfood and can be dated back as a long term staple nutritional food to the Aztecs. Chia is a natural source of Omega-3s, antioxidants and phytonutrients and is a superior plant-based source of protein and fiber. Flaxseeds may be tiny but they are a mighty seed! They are low in carbohydrates, rich in many B group vitamins, contain loads of Omega 3′s which help reduce inflammation and are loaded with fibre.

1/3 cup chia
1/3 cup plus 2 heaped tbs ground flaxseeds (flax meal)
2 eggs
1 tsp cinnamon
Stevia to taste or maple/honey/agave/rice syrup
1 tbs nut butter or coconut butter
1 cup berries (I used frozen mixed berries)
2/3 cup milk
1 tsp Acai berry powder (optional)
Coconut oil- for cooking

Blend everything together in the food processor. Spoon into a hot frypan with coconut oil, you can make them whatever size you like, I made baby ones. Cook like a pancake. Top with organic natural yoghurt or coconut cream and some extra berries.

Banana Cinnamon Pancakes

High fibre, high iron, rich in B vitamins, potassium packed bananas are great fuel for our bodies. Many studies have also shown that adding cinnamon also helps lower the GI of high GI foods like bananas and assists in regulating blood sugar levels. They are not made on white flour so you will not feel like you have a chunk of play-doh in your guts after eating them :)

2 lge very ripe bananas, puréed
3 eggs
3/4 cup almond meal
2 tbs ground flaxseeds
2 tbs coconut flour
1 cup coconut milk (or milk of your choice)
1/2 cup flavourless protein powder
1/2 tsp baking powder
1/2 tsp baking soda
Pinch salt
1 heaped tsp cinnamon

In a food processor mix all ingredients until smooth. Spoon into a hot pan and cook like regular pancakes. These were a little more fragile to flip than usual pancakes. Not really sure why? We had some of ours with a fresh squeeze of lemon and others with some Not-Nutella . YUMMO!!

These actually look quite boring sitting on the plate but they were a taste sensation!!

Hulk Pancakes

I have not had Pancakes for a while and Sunday is the perfect day for pancakes! I love sweet pancakes but have never ventured to the realms of savoury ones….today that all changed- Enter Hulk Pancakes. These are A-OK for breakfast lunch or dinner, I will probably eat them for all of those meals today because they taste so damn good.

Loaded with green goodness (add some Vital Greens too if you like) high in protein and healthy fats, low in carbohydrates, this really is the perfect any-time-of-day meal.

Pancakes-

1 cup almond meal
1/2 cup flavorless protein powder
4 eggs
Few handfuls of baby spinach or kale
1 grated zucchini
1 1/2 cups milk of your choice (dairy, almond, coconut, oat)
1 tsp baking powder
1 tsp baking soda

Sauce-

2 cups chopped mushrooms
2 cups coconut milk
1 small red onion, diced
1 clove garlic, crushed
2 tbs chopped fresh thyme

For the pancakes- put everything in your food processor and blitz until combined. Use a bit of coconut oil in your pan to cook them. Easy.

For the sauce- sauté the onion and garlic, add mushrooms and cook for a few minutes until the mushrooms start to soften. Add coconut milk and thyme, bring to a simmer then cook until the mushrooms are completely cooked.

Stack up your hulk-cakes, pour over sauce and get that in your guts! So freaking good!

Sweet Potato Pancakes

Sunday morning sleep in and pancake extravaganza! How good….. Would have been better if I didn’t read the clock wrong and think that it was 7.30 when it was in fact 6.30am….Sleep-in Fail.

Sweet potato is a rich source of flavonoid anti-oxidants, vitamins, minerals, and dietary fiber that are essential for optimal health. These pancakes are similar to the Muscle Fuel Pancakes as they are high in protein and have no added sugar. They are not made on white flour so you will not feel like you have a chunk of play-doh in your guts after eating them :)

250g roasted sweet potato (about 1 lge sweet potato)
3 eggs
1/2 cup almond meal
1 cup coconut milk (or milk of your choice)
1/2 cup flavourless protein powder
2 tbsp nut butter (or coconut oil)
1/2 tsp baking powder
1/2 tsp baking soda
Pinch salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
OPTIONAL- stevia or honey to taste

In a food processor mix all ingredients until smooth. Spoon into a hot pan and cook like regular pancakes. We ate ours with some natural yoghurt, fresh chopped strawberries and raspberry purée.

Muscle Fuel Pancakes

I love pancakes….. Not as much as coconut obviously, but a fair bit. OMG! Coconut pancakes!?!? How did this not occur to me until now…. Next Sunday, it will happen, stay tuned. Sorry, back on track, pancakes are delicious but usually loaded with sugar and white flour which we know is like eating kindergarten grade glue. These ones I adapted from a recipe I saw on Fitness in the City and thought it looked pretty special! Very high in protein, sugar free and the carrot makes them taste a little bit like carrot cake! Delicious and useful because Carrots are full of beta-carotene which helps to reduce the risk of cancer, low in carbohydrates and full of vitamins C, K and B6. Health-promoting minerals found in carrots include potassium, calcium and manganese. Leaving the skins on ensures you get all the great nutrients found in the skin as well.

1 grated carrot
3 eggs
1/2 cup almond meal
1 cup coconut milk (or milk of your choice)
1/2 cup flavourless protein powder
2 tbsp coconut oil
4 tbsp coconut flour (you could use more almond meal instead)
1/2 tsp baking powder
1/2 tsp baking soda
Pinch salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
OPTIONAL- stevia or honey to taste

Topping-
1 cup frozen mixed berries
1 cup coconut milk (or milk of your choice)
1 tbs nut butter
Stevia or honey to taste – optional

Mix all pancake ingredients together well and spoon into a hot pan. Cook as you would regular pancakes. Add all the topping ingredients to a small saucepan and heat gently over a low heat until all combined and berries are warm. You can add more milk if you need to. Spoon berry sauce over the pancake stack and eat while they are hot!

Seriously, look at these and tell me you don’t want to eat them right now!!
