After a request for some healthy Anzac Biscuits, here is couple of recipes I have found but not yet experimented with. If you try them let me know what you think!
Paelo Anzac Cookies (recipe by Theresa Cutter- the Healthy Chef)
1 cup (100 g) almond meal (ground almonds)
1 cup (100 g) flaked almonds
1 cup (75 g) organic desiccated coconut
1/4 (80 g) cup honey
1/4 cup (60 ml) macadamia nut, almond or olive oil
1/2 teaspoon bicarb soda
1 tablespoon water
Combine almond meal, flaked almonds and coconut.
Combine honey and oil into a small pot and heat gently.
Mix the bicarb and water then pour into the honey pot and mix until it starts to froth.
Pour into the dry nut ingredients and mix through until combined.
Form into 22 cookies
Bake in a low pre heated oven 120 C (248 F) for about 30 minutes until golden.
Cool and enjoy.
Or her regular version that is not gluten-free
1/2 cup (70 g) wholemeal spelt flour
1 cup (95 g) rolled oats
1 cup (75 g) organic coconut, desiccated
1/4 cup (60 ml) olive oil or macadamia nut oil
1/4 cup (80 g) honey
1/2 teaspoon bicarb soda (baking soda)
1 tablespoon water
Combine spelt flour, coconut and oats.
Combine the oil and honey into a small pot and slowly heat.
Mix the bicarb and water then add to the honey oil mixture and remove from the heat.
The mix should froth up in the pot.
Pour honey mix into your dry ingredients and mix through well.
Form into 22 small cookies and place onto a baking sheet lined with baking paper. Flatten down slightly.
Bake for 20 -30 minutes in a low 150 C (300 F) oven. or until golden brown.
Cool completely before eating and enjoy.
Makes 22 delicious Anzac cookies
