This recipe is based on one of my fave salads from Wilde Kitchen. It’s super simple, only needs a few ingredients and is the perfect way to get some more cruciferous veggies in your life when it’s 75 bazillion degrees and you don’t feel like hot veggies. I have never really been into raw broccoli but this is so darn good I could easily eat a whole raw broccoli this way, even my dad loved it…..And my dad doesn’t love anything I cook. G loved it too and I made mine on my EGG FREE MAYO so she could partake but if you do fine with eggs you can just use one of my OTHER MAYO RECIPES that are also bloody tops and minus the crap you’ll find in their store-bought counterparts.
Broccoli Bacon Salad
Ingredients
- 1 head broccoli
- 4 rashers bacon, sliced Leave out if vegan
- 1/2 red onion, finely sliced
- 1- 1 1/2 cup mayo (or my egg free mayo)
- 1 tbs wholegrain mustard
Instructions

Take the head of broccoli and chop into small, bite sized florets then pop them all into a large bowl. I also use the stalk and chop it up finely and add that in.

Grab a frying pan and cook the chopped bacon until it's cooked to your liking. I like mine nice & crispy. Set aside to cool.

Mix together the mayo & mustard. Add your red onion & mayo mix to the broccoli & toss well, making sure the broccoli is coated well. Top with the bacon and mix through.

Serve and devour.

This is so yummy. I made it tonight as an accompaniment to slowcookes ribs. Divine. Everyone loved it.
