There’s something about soups that I just love but I don’t quite know what it is…. Jokes, I absolutely know what it is. Minimal fu$ks given and maximum bang for your bunk in the nutrition stakes. Heck you can do it in a slow cooker and give even less fu$ks! You can load these bad boys to the hilt with hidden veggies, jam it full of gut-healing bone broth and you are set. Don’t be a pelican and help your future-self out by making a double batch and pop it into the freezer in portions for later.
Soup is perfect any-time-of-the-day food. Breakfast, why not. Lunch, absolutely. CBF making dinner? Soup it is. Need a snack at work? Soup. It’s a no-brainer really. Make the soup. Eat the soup. Cauliflower & Ham Soup
Ingredients
- 1 head cauliflower roughly chopped
- 2 zucchini roughly chopped (peeled if you don’t want your soup green)
- 1 red onion chopped
- 2-3 cloves garlic chopped
- 2 broccoli stalks optional
- 1 ham hock obviously omit if vegan/vegetarian
- 2 litres bone broth or stock
- 270 ml coconut cream optional
Instructions

Add all ingredients to a big pot (or slow cooker) and turn onto low. Add salt and pepper to taste.

Allow to simmer for 2-3 hours (slow cooker can be 5-6hours). Remove ham hock (you can add any meat still on the bone back to the soup if you want to) and discard.

Use a stick blender to blend to smooth. Add more broth if you like a runnier soup.
