This high protein, low carbohydrate meal can be made with any type of mince you like, if you use a different type of mince you might want to swap the herbs you are using to compliment that meat selection. This is nice and easy and is really just another version of a “meatloaf”.
4 chicken breasts, minced
3 eggs, lightly beaten
1 onion, finely chopped
2 cloves garlic, crushed
1 zucchini, grated
1 carrot, grated
1/2 cup fresh basil, chopped
1/2 cup fresh parsley, chopped
Preheat oven to 160C. In a frypan, sauté onion and garlic until onion is translucent. Mix all ingredients together well in a bowl then press into a baking dish. Pop it in the oven and bake for 30-40 mins or until cooked through. Cut into slices and serves with some veggies, a big salad or just on it’s own as a snack. This can be cut into portions and frozen.
