So chocolate with lamb, super weird or super delicious? I think both. The raw cacao in this recipe gives the lamb an amazing rich & mildly chocolatey flavor without being too much of a punch in the face. Lamb is a great source of protein & is rich in iron, zinc & B vitamins. I love the way this lamb just falls apart from the cooking & can be a great addition to a salad if you want more of a Summer meal rather than a Winter warmer.
Lamb- leg or shoulder
3 tbs raw cacao
1 tsp ground cinnamon
Big pinch salt
1 cup red wine
1-2L coconut water (I used RawC) or coconut milk or chicken stock
Pop everything except the lamb in the slow cooker & mix well, add the lamb. The liquid should almost cover the lamb or come up at least 2cm from the top of the meat. Pop the lid on & turn it onto low for 6-8hrs. This next bit is optional, remove lamb plus 2 cups of liquid from the slow cooker & place in a baking dish. Sprinkle with a good pinch of salt & bake in the oven on 200C for about 20mins to crisp up the outside of the lamb. Pull the meat off the bone, dunk it in the saucey liquid & serve over cauliflower rice, cauliflower mash or whatever else tickles your fancy. A pea purée would be pretty delicious too.
