3 chicken breasts
2 cups shredded coconut
2 eggs
1/2 tsp cayenne pepper (optional)
1 cup almond meal
Preheat the oven to 200 degrees of 180 fan forced. Line a baking tray with baking paper.
Cut each chicken breast into 3 equal sized pieces. In 3 separate bowls, place eggs(lightly whisked), almond meal and coconut. If using the cayenne pepper, add this to the almond meal bowl and mix through well.
Take the chicken pieces, roll in the almond meal to coat, dunk in the egg wash then, roll in the coconut to cover outside. Place on the baking tray and bake for 15-20 mins, depending on the size of the breasts.
