This meal started out as a bit of a “mash-up” of what was in the fridge but actually turned out to be pretty tasty, super easy and completely wholesome. Nothing was measured so these are just estimates but feel free to chuck in whatever you can find in your fridge.
Mash Ingredients
1/2 broccoli
1/2 cauliflower
1 avocado
Handful baby spinach
1/2 cup milk (I used almond milk)
Salt and pepper to taste
2 carrots
1 tbs ABC spread(almond, brazil and cashew)- OPTIONAL, I have no idea why I added this in but it tasted good
Fish Ingredients
2 pieces barramundi or another firm fish
2 tbsp left over Red Curry Paste (I had this is the freezer- get the recipe HERE)
Pop the fish and the curry paste in a container to marinate. The longer the better but I only gave it about 15 mins.
Steam the cauliflower, broccoli and carrots until just cooked (I did mine in the microwave but whatever floats your boat). In the food processor put the avocado, spinach and steamed veges and give it a whizz. Add the milk, ABC spread and salt and pepper and blend until smooth.
Heat your frypan with about a tablespoon of oil (coconut or macadamia), add fish and paste and cook until fish is cooked through and flakes apart.
Serve fish on a bed of mash. Done. You have loads of veges and a great healthy piece of fish.
