I was really inspired watching the MasterChef Masterclass on Friday night and this is pretty similar to what they made. This recipe is a great BBQ meal. The yoghurt makes the chicken really tender and helps the Harissa really stick to the chicken. The yoghurt dressing is optional but it adds a great freshness to the chicken and helps take away a bit of the heat of the chilli too.
Chicken-
1/2 cup Harissa Paste
1 cup natural yoghurt
4 chicken breasts- cut into tenderloin size slices
Yoghurt Dressing-
1/2 cucumber- deseeded, grated and excess water squeezed out
1 cup natural yoghurt
1 clove garlic, crushed
Rind of 1/2 lemon
All all yoghurt dressing ingredients to a bowl, mix well to combine then refrigerate until required.
In a bowl add Harissa paste and yoghurt and mix well. Add raw chicken, coat well and allow to marinate for at least an hour but the longer the better. Thread chicken onto some wooden skewers that have been soaking in water (so they don’t catch on fire) and cook on the BBQ.
Serve skewers with yoghurt dressing and a nice big salad. Easy Peasey.
