
Ingredients
Tzatziki
- 1 cup natural coconut milk yoghurt or Greek yoghurt
- 1 cup grated cucumber excess liquid squeezed out
- 1 tsp grated garlic
- Zest & juice 1/2 lemon
- 1/2 tsp salt
- 2 tbs fresh mint finely chopped
Kofta
- 500 g lamb mince
- 2 cloves garlic crushed
- 1 tsp salt
- 1 grated carrot
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 tsp dried oregano
- 3 tbs fresh mint chopped
- 1/4 cup almond meal
Instructions

For the tzatziki, add all ingredients to a bowl and mix well to combine. Taste and adjust seasoning as necessary. Pop in the fridge until serving.

For the kofta, add all ingredients to a large bowl and mix well using your hands to combine completely.

Take some skewers and trim to size if you need to to fit them into your frying pan.

Shape the meat mix into a sausage shape in your hands then pop it on the skewer.

Heat a large frying pan with your cooking fat of choice. Place your koftas in and cook until golden on each side.

Serve with tzatziki and whatever else you like!
