I remember getting these bones from the butcher for our dogs when I was a kid, I had no idea how amazing the nutrition is in a marrow bone!
Marrow is made up mostly of beautiful fats that do an ace job at supporting immunity, gut health, bone health, injury recovery and insulin regulation plus it tastes bloody delicious. Blended with a great quality butter and you have yourself a nutrition and taste sensation.
Whipped Marrow Butter
Ingredients
- 4-6 long split marrow bone pieces only the long bones will work for this
- 2 tsp salt
- Few springs fresh thyme
- 200 g unsalted butter
Instructions

Preheat oven to 180C. Add the marrow bones to a baking tray, sprinkle with salt and thyme and roast for 30mins. Remove from oven and scoop the soft marrow & leaves from thyme sprigs into a food processor with the butter. Blend until smooth, taste and season if required. and store in jars in the fridge. Can also be frozen for 3-6 months. Use discarded bones for broth.

Hi I’m not sure I understand this method, I thought you had to simmer for long periods of time to have great bone broth

You do, this is marrow butter. You don’t need to cook it long to scoop the marrow out
