Very Merry Christmas Truffles – A Healthy Nutritious Chocolatey Christmas Treat!
Gluten Free, Dairy Free, Grain Free, Sugar Free, Clean, Healthy Fats, Raw.
Ingredients
1/3 cup coconut oil
1/2 cup dried cranberries
1/4 cup goji berries
1/2 cup pitted dates
1/2 cup unsweetened shredded coconut
1/3 cup raw organic cacao powder
1/2 cup chopped pistachios
1/2 cup almonds
Instructions
Soak dates in warm water for 15 minutes to soften.
Whilst dates are soaking add almonds, cacao, shredded coconut, cranberries and coconut oil to a food processor and mix until it creates a dough consistency.
Add dates to the food processer and pulse them through the mixture until they are fully incorporated.
Place the mixture from the food processer into a bowl and fold in chopped pistachios and goji berries. If mixture is too dry add either a tablespoon of filtered water, or a little bit more coconut oil. Let the mixture set in the fridge for 10 minutes.
Once set, wet hands and roll mixture into bite size balls. Then roll in shredded coconut or finely chopped pistachios. Enjoy!
Note: I like to store these in the fridge or freezer for a yummy Christmas treat!
