This was inspired by a recipe from Jordan Pie which was some epic looking spring rolls she makes with rice paper wraps. And it got me thinking, would nori wraps work? Well team, I’m bloody pleased to report that yes they do. It’s like fried sushi. You are welcome.
You can mix up the fillings to be whatever you like. I have since done pork mince as well as salmon. All epic. I used my airfryer for this and have not tried shallow frying them in coconut oil but I imagine it would probably work…. As I said though, haven’t tried it so report back if you do. The airfyer I bought was the Kogan brand and so far I’m happy with it.
Nori Spring Rolls
Ingredients
- 10 nori sheets
- 1/2 red onion finely diced
- 1 grated carrot
- 1 grated zucchini
- 1 clove garlic crushed
- 1 tsp ginger grated
- 3 cups cooked and cooked rice or cauliflower rice for Keto
- Salt
- 500 g chicken mince/ground meat
Sauce
- 1 tsp fresh grated ginger
- 1/4 cup coconut aminos
- 1 tbs apple cider vinegar
- 1 tbs sesame oil
- 1 tsp fish sauce
Instructions

Add carrot, onion, garlic, ginger and zucchini to a large frying pan with a tbs of oil (I used coconut oil) and cook until onion is translucent. Add chicken mince and cook until completely cooked. Season with salt and pepper.

Remove from heat and add rice or cauliflower rice and stir through. Take your nori sheets, add some mince filling and roll like you would a rice paper wrap being sure to fold the ends in too. Once you have rolled all the springrolls, brush or rub with some olive oil if using an airfryer (skip this step if you are shallow frying them).

Heat your Airfryer to 200C and cook for 20-30 mins, flipping them over halfway.

Mix all sauce ingredients together in a bowl and you are ready to dip!
