So, I love nut butter and I love adding it to random things, muffins, cookies, eating it on celery, out of the jar, great to make a satay sauce, the list goes on. What I do not love is paying $7 for a tiny jar of the stuff! Homemade, apart from being half the price, is a great way to ensure that no added nasties have snuck in! You get all the goodness from the natural nuts with no added crap. You can use whatever type of nut you like. For this batch I used hazelnuts, almonds and brazils for a weird twist on the normal ABC Butter. I am also going to experiment with homemade Nutella at some stage….
I used my new Thermomix and it took me 2 minutes, you can definitely use your food processor though, it will just take a bit longer.
150g Brazil nuts
150g Hazlenuts
150g Almonds
In your food processor add all the nuts and blitz on the highest speed. It will probably take 5-10 minutes and you might need to give your food processor a bit of a rest every few minutes depending on what sort it is just to make sure it does not bust itself. The nuts will go through a few stages, the will be finely chopped, nut meal, nut flour and then all the oils will start to release and it will all start to clump together. Don’t stop yet! Keep blitzing until it all comes into a paste that is the consistency of a crunchy peanut butter. If you are not sure, just give it a bit longer. This made 2 jars of nut butter- mildly overkill for my needs but I am sure I will find some willing recipients of the extra.
