This is a great breakfast option for those who cannot tolerate even the small amount of gluten in oats but love the idea of a warm delicious oatmeal or if you are like me and love oats but hate the texture of porridge! The nuts provide a great punch of vitamins and nutrients and some great healthy fats, the banana is the perfect carbohydrate to start your day and is packed with magnesium. The eggs will give you a great protein boost for the morning. This will make enough for about 3 serves (or two pretty hungry people).
** Update- I have made this a few more times and have added a grated zucchini to the mix while cooking. Extra nutrition and doesn’t change the flavor.
1 cup seeds (I used a mix of chia, sunflower and pumpkin)
1 cup walnuts (if you don’t like walnuts swap for almonds, brazils, pecans or hazelnuts)
2 tbs flaxseeds
1/2 cup coconut or almond milk (you can use regular milk if you like)
1 tsp cinnamon
1/2 tsp nutmeg (or just use a teaspoon of mixed spice)
1/2 tsp ginger (optional) ginger is a great anti-inflammatory
1 banana, mashed (or use a grated apple or pear if you like them better)
3 eggs
1 tbsp nut butter- I used ABC (almond, brazil and cashew) but whatever is fine
Berries- to serve
In a food processor, whizz the seeds, nuts and spices until it forms a rough crumb, I like mine I bit chunky but do it to your taste. In a saucepan (no heat yet), add eggs and milk and whisk until combined, now add nut butter and banana and whisk again until all mixed. Put pot over a low heat and add the nut mix, stirring constantly until liquid has absorbed into nut mixture and it is warm. A few minutes should do the trick. Pop it into a plate, top with fresh berries and dig in! I love mine with a dollop of coconut milk yoghurt on top, natural yoghurt would be good too. YUM!!
