These are so easy and a fabulous dose of healthy, low GI carbs & are very low fat. Oats are very high in a fibre called beta glucans that can help lower cholesterol, we’ve all seen the ad’s, you know why you should eat them. They are not completely gluten free but are VERY low in gluten and are a great source of energy. Ginger has health benefits ranging from reducing morning and motion sickness, cancer prevention, cold & flu prevention, reducing pain & inflammation & migrane relief.
3 cups whole grain oats
2 tbs orange zest
2 tbs fresh grated ginger
1 tbs cinnamon
1 cup fresh orange juice
1/2 cup water
Stevia to taste or about 2 tbs honey (taste it and see what you think, add more if you like it sweeter)
1 egg
Preheat oven to 180C. Line a baking tray with baking paper. Place all ingredients into food processor and blend until it forms a dough. Wet hands and roll dough into cookie shapes and pop on tray. Bake for about 15mins or until cooked to your liking.

I am so far behind on reading your recipes, I’m embarrassed!! As you can see I just read through all the ones I missed and I am in food heaven right now!! My new goal is to try to make a blogger recipe 1-2x a week, so I think there is a few on here that I am adding to my list! Oh, did you know that raspberry and coconut together are my all time favorite??….I think you were reading my mind 😉

As for oats, I don’t like to have too much gluten, but you are right- oats are only processed alongside gluten containing ingredients and therefore are ‘contaminated’ if you will. In Europe they are considered gluten free!
