So these are Paleo-ish…. Is that a word? It is now. They get the “ish” because they contain rum…. I don’t think the cavemen had rum, well maybe they did, I might be mistaken. Either way, I could not think of any worthy substitute for rum so here they are, with rum but minus the other rubbish that is included in the standard recipe.
200 g Paleo Gingerbread crushed, if you don’t have this you can use almond meal or hazelnut meal, you might have to adjust the quantities.
1 cup coconut butter
2 tbs coconut oil
12 fresh dates, puréed
¼ cup cocoa
1/4 cup rum- add more or less as you like it.
Extra coconut for rolling
In the food processor blend dates, coconut oil, coconut butter, cacao & rum until smooth. Add the gingerbread and pulse until completely combined. Roll into balls then roll in the coconut to coat. Store these babies in the fridge or freezer. Enjoy!
