Walnuts have been shown to reduce bad cholesterol in our body and help combat heart disease. They are rich in fibre, magnesium and antioxidants. Salmon is a great source of omega fatty acids and contributes to heart health, muscle and tissue health and brain and nerve benefits.
3 tbsp pesto (use fresh organic or make you own)
2 salmon fillets grilled (you can use chicken or tofu if you prefer)
Baby spinach
Punnet cherry tomatoes chopped
1 pink lady apple sliced
Handful walnuts
Toss all ingredients together in a bowl and serve. Easy Peasey. Apologies for the crap photo, this is obviously one I took myself on the iPad, not taken by Trav.
