Salted caramel flavored things & ice cream would have to be 2 of my favourite things of all time. I am yet to meet a salted caramel delight that I did not love, & ice cream & I have had a long-standing love affair for longer than I can recall so it is really not surprising that these 2 have made their way as one into my life & my stomach.
You can add more or less sweetener as you like and I also added a few big tablespoons of GELATIN for a great boost of skin, hair, nail & gut health as well as a nice dose of protein. 500ml full fat coconut cream
500ml water
5 tbs mesquite powder
2 tbs lucuma powder
1/4 cup maple syrup/rice malt syrup (or stevia)
3 eggs
Few good pinches rock salt
Blend/whisk together all ingredients until smooth then pop in a large saucepan. Bring to the boil while stirring constantly then remove from heat. Allow to cool to room temperature then pop in the fridge to get cold. Once cold pour into your ice cream maker as per the directions & watch that baby work its magic. If you don’t have an ice cream maker you can pour it into some silicone cupcakes moulds to freeze, or a shallow tray then reblend to smooth in your food processor prior to serving. I sprinkled mine with a little more salt when I served it.
