Steamed puddings are such a warm and comforting treat! Mangos are just coming into season and they are my absolute favourite fruit! Mango is rich in dietary fiber, vitamins, minerals, and poly-phenolic flavonoid antioxidants. I am feeling that more steamed puddings might be on their way in the next few weeks!
Pudding-
1 lge mango, peeled and chopped
Stevia to taste or 1/4 cup honey/agave/maple syrup
2 eggs
170g quinoa flour
2 tsp baking powder
180g coconut cream
Sauce-
1 mango- puréed
1 cup coconut cream
Stevia to taste or 1/4 cup maple/agave/ honey
1/2 tsp ground cardamom (optional)
In your food processor blitz the mango into a purée. Add remaining pudding ingredients and blend well. Fill a pot about 1/2 full with water and bring to the boil. Place steamer part on top and cover with lid. Spoon pudding batter into ramekins or silicone moulds and place in steamer. Cover and cook for 15- 20 minutes. In a saucepan add all sauce ingredients and cook over a low-med heat for 5-10mins. Remove puddings from moulds, spoon over sauce and eat up!

Me too Sarah! Mango season is my favourite!! They are awesome frozen in chunks then blitz them in the food processor…. Instant mango sorbet!
