These are a perfect after dinner treat, they are just sweet enough and rich enough that you will not want to gorge yourself on them. They are full of nutritional goodness so do not feel bad about these delicious little balls, you are feeding your body so many great nutrients. Now if you are expecting these to be sweet, you will be very disappointed, they definitely are not but they are great option if you are trying to curb your sugar addiction and they do melt in your mouth like chocolate. half a jar of nut butter ( I used ABC- almond, brazil & cashew but almond, hazelnut or peanut would be good too)
250g of nuts (I used walnuts but whatever you like is fine)
1/2 cup of raw cacoa powder
1 cup shredded coconut
4-5 heaped tbls of coconut butter (coconut oil)
One or more of these flavours:
Seeds from one vanilla pod (or use vanilla essence)
cinnamon (I used about 2 tablespoons)
One or more of these, to adjust the consistency, if you need to or want to and have them in the fridge anyway:
Dry Fillers-
almond meal
LSA
protein powder – flavorless and no added sugar
a small handful of chia seeds
maca powder
acai powder
Blend the above in a bowl, using a metal spoon to “moosh” the coconut oil and nut butter through the dry stuff. Don’t be precise – chuck in what feels right. It will go quite “wet” – this is because the coconut butter turns to oil. Add some extra dry “filler” stuff to adjust the consistency. The chia seeds will do this super well. I usually pop my mix back in the fridge for about 20 mins now to make t easier to work with. Next grab little handfuls and form into “balls” and pop them on a tray lined with baking paper. Stick in the fridge for an hour, or if you’re impatient like me, in the freezer for 20 minutes.
