I am loving nut butter at the moment, I eat it on my Sweet Protein Muffins and the Savoury Ones but you can do whatever you like with it, use it in place of butter in your recipes, eat it out of the jar, I do. This was a different twist on a boring almond butter…. Add some seeds = deliciousness as well as a bundle of Vitamin E, Magnesium and Selenium. Thanks very much sunflower seeds, you have been most helpful. The spices are completely optional, I just love adding spices to everything, especially these ones, leave them out if you want, it doesn’t make you weird…. Well maybe a little.
150g sunflower seeds
300g almonds
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
In the food processor, blitz everything until it turns to butter. Don’t stop when you get to a paste, keep going, soon the natural oils of the nuts and seeds with release and you will have your nut butter…. I promise it’s worth waiting for.

Hi. I have only just come across your site and I LOVE all of your recipe ideas – you are an absolute gem. Going to be trying them out over the next few weeks. I tried this one today and I had to keep blending for ages as it just stayed like a crumbly base mix and didn’t go to paste. I added some macadamia oil and this helped and then I got it to a paste like consistency, but not really as paste like as I thought. I reckon I blended for a good 10 minutes or more. How long do you have to blend for? thanks so much.
Lisa.

Hi LisaQ! Thanks so much for stopping by the blog! Nut butters are awesome but how quickly it will work can depend on a few different things…. What sort of food processor you have will make a big difference in how long it will take. A high speed food processor like a Vitamix will work really well and pretty fast whereas a regular food processor will take twice as long, it will still work, it just needs more patience 😉 I also find that depending on the size of your food processor, you might need to add more nuts/coconut if it is a big one. I find i usually use 2 packs of shredded coconut (what you are using is fine) and having more in the bowl of the processor seems to let it blend better. With your nut butter, I think maybe you just stopped a bit too soon, before the the nuts and seeds really started to release their oils properly. Here’s a you tube clip to have a look at on making nut butter http://www.youtube.com/watch?v=rTlI7y5JfDo&feature=youtube_gdata_player

Thanks for all of that. I have a smaller and a larger food processor and I started in the smaller one, then transferred to the large one and then back to the smaller one. They are just basic off the shelf as I haven’t yet invested in the Vitamix (maybe will look into this).
Thanks for the youtube link as well. I am going to keep on experimenting till I get the feel of this. Have a great day.
