This is a great healthy version of the humble Taco! Full of flavour and fresh ingredients it is a light and delicious meal. I have used chicken breasts for a nice change to mince in this recipe. This serves 2.
2 chicken breasts- cut into tenderloin size pieces
2-3 tbs Mammoth Kitchen TACO SEASONING as it has no added crap
1/2 cup almond meal
To serve-
Lettuce leaves
Tomato- diced
Avocado- diced
Natural Yoghurt- optional alternative to sour cream
Preheat your oven to 180C and line a tray with baking paper.
In a bowl add our taco seasoning and almond meal and mix well. Take your chicken pieces and roll then in the almond meal mix to coat thoroughly and then place on tray. Bake for about 15 mins or until cooked.
In your lettuce “tacos” add some tomato, avocado, chicken and yoghurt, roll it up and tuck in!! YUM

Hmm, I was thinking of making taco chicken wings…using brown rice flour for coating. How do you feel about brown rice flour? I’d like to use almond flour, but $10 per bag is expensive for me! thanks for checking out my pinto bean salad, it’s good!! Let me know if you like brown rice flour!

You can definitely use brown rice flour. Great option. You an also just chuck some raw almonds in the food-processor and blitz them until you have almond meal. Much cheaper 🙂 Let me know how you go.
