This is delicious, easy and filling. It contains loads of veges all cleverly disguised as Green Goodness. All the delicious Thai flavours are also packed with great nutritional benefits. I know the avocado might seem weird but it gives the purée an awesome texture.
1 red chilli, chopped finely (deseed it if you don’t like it too hot)
1 stick lemongrass, bruised and chopped finely
2-3 cloves garlic- crushed
3 chicken breasts, sliced
Juice 1/2 lime
1 tin coconut milk
1 tsp tamarind paste
Salt and pepper to taste
1 head broccoli (including stalk)
2 carrots
1 avocado
1 cup baby spinach
1 cup rocket
1/2 cup milk (whole, skim, oat or almond milk)
1 tsp turmeric (amazing anti-inflammatory and cleansing properties)
Steam broccoli and carrot until soft and add to food processor with avocado, spinach and rocket, turmeric and milk and process until smooth. This is your Green Goodness component.
In a frypan, add chilli, garlic and lemongrass and stir fry for a few minutes, add chicken and brown both sides. Add tamarind and coconut milk and stir to combine, simmer on a med heat until chicken is cooked, add lime juice and pinch salt and cook for few more minutes. Serve on top of Green Goodness.
