Cake for breakfast! Cake for breakfast! It’s like Christmas when mum let’s us have chocolate for breakfast…. Except I don’t feel like puking after this, nor do I get a massive sugar high and a face full of pimples. Guilt free & far more nutritious than chocolate. It is a super high protein brekkie (about 30g of protein), low in carbs and the best bit, YOU GET TO EAT CAKE FOR BREAKFAST!! You can have this for dessert, a snack or just because. Go, now, you are going to love it!
2 tbs protein powder
2 tbs almond meal
1/4 tsp baking powder
1/2 tsp vanilla powder
1/2 tsp cinnamon
1 egg (vegan sub for 2 tbs ground flax or chia seeds)
1 tsp coconut oil
1 tbs milk (I used almond milk)
Pinch stevia to taste or about a tbs honey/maple/rice syrup
Coconut cream & berries to serve
Mix everything except the coconut cream & berries in a big mug. Pop it in the microwave for about 2-3 mins. Start with 2 and check it to see if it’s done. You can definitely do this in the oven in a ramekin or muffin tin if you have the patience. I obviously do not. Tip it out of the mug into a bowl, pour over coconut cream & berries. Chow down. You are welcome.

I’m going to try this for an after school snack for my son – yum! Could I substitute anything for the protein powder? Some LSA (linseed/sunflower/almond meal) or besan-flour (chickpea flour for protein) or rice-flour perhaps…? Thanks in advance!

I just made this using besan flour instead of protein powder – it turned out awesome! So quick & easy – Yummo! Next time I might add raw cacao instead of cinnamon for a choc version….mmmmmm. Thank you!

Just made this for dessert….amazed at how easy & yummy it was. I didn’t have an egg so I used Chia seed as you suggested and added a little more milk to compensate for the drier mix…this will be a regular snack when I feel like a treat….thank you for another wonderful recipe!

I can’t believe this actually worked!! No offense to you, I have tried heaps of recipes with protein powder in them and they always come out chewy and hard. This was nice 🙂 maybe could be improved if I used a different type of protein powder? I have only ever used Whey.
